Expect to learn a lot from this demonstration, where one of Vietnam’s signature dishes will be freshly prepared before your eyes.
Flavourful Vietnamese Food
Vietnamese cuisine comes in many forms, all of them flavourful and vibrant. With traditional dishes often characterised by fresh ingredients, avoiding excessive amounts of dairy and oil, and using rice-based carbs over wheat-based carbs, you’ll find many of the traditional dishes you tuck into while in Vietnam are naturally low in sugar and gluten-free. So, there’s even less reason to feel guilty when tucking into something tasty! Among the plethora of rich flavours found throughout Vietnamese cuisine, lemongrass, ginger, mint, lime, and Thai basil leaves are all popular.
Vietnamese Cocktails
Vietnamese mixology is an evolving art worth taking the time to appreciate; while you’ll find a whole range of traditional, popular cocktails available throughout this nation, you’ll also come across cocktails that lean on regional ingredients and flavours to deliver fresh cocktails that complement the cuisine perfectly. These will come in many different forms, and you’ll just have to wait and see what cocktails you’ll have the chance to enjoy when visiting Vietnam, but many of the most delicious drinks in Vietnamese bars lean on everything from star anise and ginger to Vietnamese coffee and more to give traditional cocktails an exciting twist.

Arriving in the village of Thach Tan, which is just north of Tam Ky and south of Hoi An, you’ll meet Kim Ta Huynh: a local legend and Vietnam War veteran who had a hand in the construction of the Ky Anh Tunnels. Following in his experienced footsteps, you’ll learn more about his life in central Vietnam, the tunnels’ use during the war, and the legacy this conflict has left behind. At their peak, it’s reported that there were over 32 kilometres of tunnels stretching throughout the region. You’ll also have the opportunity to learn more about authentic weaponry and equipment from the period, adding to this insightful experience. On your way back from the Ky Anh Tunnels, you’ll have the opportunity to visit Vietnam’s Heroic Mother Monument and Tam Thanh village. In this vibrant fishing village, over 100 houses have been painted to reflect the region’s people and culture.
Things to see:
Tam Thanh
A lively fishing village in central Vietnam, Tam Thanh is known for being home to extensive street art and artistic murals paying homage to Vietnam’s history, people, and culture. A rural location boasting stunning beaches, this destination really is a hidden gem of colourful artwork and culture in the tropical rainforests dominating the region.
Huynh Kim Ta
Huynh Kim Ta is one of the most famous Vietnamese veterans associated with the Ky Anh Tunnels, being involved in both their construction and use throughout the Vietnam War. An inspirational figure with first-hand experience of the war, there’s so much to learn from his experiences and stories.
Vietnam’s Heroic Mother Monument
Found just north-east of central Tam Ky, on the slopes of Cam Mountain, Vietnam’s Heroic Mother Monument is one of the largest war memorials in Vietnam. It was built in 2015, following six years of construction, to commemorate the nation’s 140,000 heroic mothers – a title the Vietnamese government bestowed on mothers who had made significant contributions to their nation’s wars and lost children in conflicts against the French and Americans. The iconic sculpture atop this memorial depicts a local mother, Nguyen Thi Thu, who lost several children and grandchildren in various wars during her lifetime.

Hue - Street Food Tour
DAY 24
Time at Port: TBD
One of the best ways to explore Hue and its unique culture is through its sensational street food scene; so, this evening, you’re going to embark on the culinary journey of a lifetime through Hue’s bustling city streets. With an expert guide offering suggestions and interesting information about each authentic dish you try, you’ll meander through Hue sampling some of the delicious Vietnamese dishes available from street food vendors – among which will be some Hue specialities, too. From fragrant Nem Lui skewers and stuffed Banh Mi to locally-produced liquors and deep-fried Banh Khoai, an incredible medley of flavours and authentic Vietnamese foods awaits. If there was ever a time to indulge in the sensational food Vietnam has to offer, this is it.
Things to see:
Salt Coffee
A new phenomenon sweeping the nation, Salt Coffee – which is also known as Ca Phe Muoi – is a hot drink that introduces a salted foam, which is also creamy and sweet, to bitter coffee. When the two mix, it creates a salted caramel-type taste that’s easy to enjoy. Somewhat similar to a macchiato, but made using foamed heavy cream over milk, this comforting drink will awaken your taste buds.
Banh Khoai
Banh Khoai is something of a Hue specialty, and a tasty treat that brings a medley of authentic Vietnamese flavours together in one delicious bite. This dish features a deep fried rice flour pancake stuffed with pork, shrimp, and beansprouts; a little greasy, this is often served alongside salad and a light peanut-based sauce – perfectly complementing the rich flavours at play.
Nem Lui
If you’re looking for something full of authentic flavours and easy to eat on the go, Nem Lui is the perfect street food for you. A popular dish in Hue, which is considered something of a speciality of the former imperial city, Nem Lui consists of grilled pork on charred lemongrass skewers, often flavoured with ginger, chopped lemongrass, and chillies – among a host of other spices. Akin to a kofta, every bite of Nem Lui is overflowing with flavour.

With new knowledge of the tea practices and ceremonies of Hue’s royal court, you’ll continue your tour of this city with a meandering cruise along the Perfume River – a waterway that cuts through the city, boasting sensational scenery and impressive sights on either bank. Your river cruise will disembark at Thien Mu Pagoda, among the most ancient sites in the city, before enjoying lunch at a local restaurant. This is a great opportunity to reflect on your day so far, while tucking into some authentic Vietnamese cuisine. Following this, you’ll venture out into the surrounding countryside to visit the royal tombs of two former emperors. An interesting end to your tour of Hue, the entire day will be full of fascinating facts and insightful investigations of the Nguyen dynasty and Vietnam’s royal past.
Things to see:
Imperial City of Hue
A remarkable royal enclosure within the walled city of Hue, the Imperial City is an impressive complex of palaces, shrines, gardens, and offices that comprised the imperial capital of Vietnam during the Nguyen dynasty. Developed throughout the mid-17th century, the site itself is fortified with ramparts and encircled with a moat, affording the Imperial City an imposing image. Inspired by Beijing’s Forbidden City, Hue’s Imperial City is oriented to face the Huong Giang to the southeast, whereas the Forbidden City faces true south.
Huong Giang
Huong Giang, also known as Perfume River, is a river that cuts through Hue. In the autumn, flowers from several orchards upriver fall into Huong Giang, giving it a perfume-like aroma. An impressive waterway boasting stunning scenery, the Huong Giang basin enjoys the highest rainfall in Vietnam – leading to luscious jungles and vibrant landscapes.
Thien Mu Pagoda
An iconic, historic temple in the heart of Hue, Thien Mu Pagoda is a sight to behold – and often seen as the unofficial symbol of the city itself. Standing seven stories, this temple towers over much of the city, standing atop Ha Khe hill. It was constructed in 1601 by Nguyen Hoang, the first of the Nguyen Lords, on a pre-existing shrine at the behest of Thien Mu; legend says Thien Mu sat at the site of the temple and foretold that a lord would come and erect a pagoda to pray for the nation’s prosperity.

A comprehensive exploration of modern Vietnamese culture and some of the most significant moments in the nation’s modern history, this will be a day you’ll remember.
Things to see:
War Remnants Museum
Established in 1975, the War Remnants Museum in Ho Chi Minh City primarily features exhibits exploring the First Indochina War and the Vietnam War. Initially, it was known as the Museum of Chinese and American War Crimes, and ironically, the building in which the museum is housed was used as an American military intelligence headquarters during the Vietnam War. However, it adopted its current name in 1995 following an improvement in diplomatic relations with America and the end of an American embargo.
Independence Palace
Among the many impressive landmarks found throughout Ho Chi Minh City, Independence Palace – which was constructed in just 1966 – served as the official residence and workplace of the president of the Republic of Vietnam until 1976; just a year prior, it was the site of the infamous Fall of Saigon, an event that marked the end of the Vietnam War. Since 1976, when the capital of South Vietnam was relocated to Hanoi, it has served as a convention hall for state events and a museum. A staggering structure that offers a fascinating insight into the life of government officials during the Vietnam War, this is one landmark you won't want to miss.
Saigon Opera House
Officially known as the Ho Chi Minh City Ballet, Symphony, Orchestra, and Opera, the Saigon Opera House is a historic colonial-era landmark in Ho Chi Minh City. Built in 1900, it stands as a fantastic example of French Colonial architecture. It has served as a theatre, a governmental building, and a temporary shelter for refugees arriving from North Vietnam in the 1950s.

DAY 28
Time at Port: TBD
When you’re spending some time in Cai Be, one of the most interesting experiences you can embark on is a guided cruise of the Mekong River Delta; a fascinating region of southern Vietnam, the Mekong River Delta is an escape from the hustle and bustle of Vietnam’s major cities and a chance to immerse yourself in stunning scenery while learning more about a more rural way of life. Today, you’re going to hop on a traditional sampan boat and explore the complex network of waterways that make the Mekong River Delta unique. During this leisurely experience, you’ll have the chance to enjoy local tea and fresh fruit while sightseeing, and there will be several interesting stops throughout the day that are worth looking forward to. Among these, you’ll visit an ancient house, local restaurants serving authentic Vietnamese cuisine, and places where you can learn more about the local cottage industries found throughout this region. Your Mekong River Delta cruise will also include an exploration of Cu Lao Tan Phong, an islet boasting incredible scenery and a network of canals through vibrant mangroves. Unlike anything you’ll see in the major cities here, this is a fantastic way to see a completely different side of Vietnam and something that only adds to your incredible adventures in Southeast Asia.
Things to see:
Cu Lao Tan Phong
If you’re interested in exploring what life is like in the Mekong River Delta, Cu Lao Tan Phong is the perfect place to visit. A tourist hotspot among the settlements here, you’ll have the opportunity to sample fresh fruit while immersing yourself fully in the relaxed local life. Cu Lao Tan Phong is famed for an abundance of vibrant gardens and rich orchards, alongside welcoming locals with plenty of stories to tell. So, whether you’re sightseeing or looking for more insight into life in this remarkable region, this island is ideal.
Mekong River Delta
The Mekong River Delta is a large area in southern Vietnam where the Mekong River empties into the Gulf of Thailand and seas south of Vietnam; boasting a complex network of distributaries, the changing seasons can drastically alter the landscape here. However, this wet coastal environment is vital to the nation’s agricultural industry. Reportedly inhabited from as early as the 4th century BC, the Mekong River Delta is overflowing with ancient history and centuries-old tradition, offering a unique insight into this nation’s past and people.
Sampan Boat
Narrow, flat-bottomed wooden boats found frequently throughout East and Southeast Asia, sampan are traditionally used to traverse the region’s rivers, for shallow fishing in certain areas, and for transporting goods between river-bound settlements. In some cases, larger sampan are used as permanent places to live, not wholly dissimilar to how narrowboats are used in the United Kingdom, or the houseboats in Amsterdam’s canals.

The whole experience and organisation from Iglu Cruise was excellent. Transport and hotel in Tokyo perfect choice and the cruise itself on Diamond Princess was excellent. Staterooms are much larger than other cruise ships we have been on with lots of storage and wardrobe space. Food and drink top quality and the ports we called at gave a varied and interesting look at Japan and South Korea. Would recommend Iglu Cruise and the Diamond Princess

Vietnamese cuisine comes in many forms, all of them flavourful and vibrant. So, there’s even less reason to feel guilty when tucking into something tasty! Just south of the Imperial Citadel of Thang Long in the heart of Hanoi, this temple was founded and first built in 1070.

Hue - Full Day Tour
DAY 25
Time at Port: TBD
Hue, a historical city at the heart of Vietnam’s imperial past, is a sensational destination to explore, with an abundance of intriguing sites to explore and cultural traditions to uncover. Today, you’ll be invited to embark on an insightful tour of this remarkable place, with visits to the Imperial City of Hue and a serene cruise along the Perfume River on the agenda. You’ll start with the Imperial City complex, which is modelled on Beijing’s Forbidden City and features an impressive collection of palaces, temples, gardens, and more. Then, you’ll visit a hidden Vietnamese teahouse, the perfect place to learn the art of pouring the perfect cup and the interesting history behind tea in Vietnam.

Discover Mekong Delta by boat
DAY 28
Time at Port: TBD
What’s Included

Guided Mekong Delta cruise on a traditional Sampan boat
Breakfast, lunch at a local restaurant, and refreshments and snacks during the Mekong Delta cruise
Transfers to and from your hotel accommodation and the sites outlined in the itinerary (where applicable)
